A couple years ago, my best friend and I went on a big European adventure. Some of the most standout memories from that trip are the foods that we ate. They were incredible. Like a thousand times better and fresher than American food. During one of our days in Barcelona, we were hungry for lunch – a common human experience. We went to a restaurant and both decided to order burrata (pictured below), which neither of us had ever tried before, but we both love cheese, so we figured why not try it. It’s basically a ball of mozzarella cheese, but with cream inside of it. Sounds weird, but Oh. My. Goodness. That lunch sparked an ongoing love and adoration for burrata that is still so strong today.
When I arrived back in America after that trip, I was pleasantly surprised to find out that burrata is available in the US and it’s actually not that hard to find – Trader Joe’s has it!
After buying and preparing it many times, I’ve come to realize that you can absolutely get fancy with burrata and prepare it in many different ways, but one of my favorite ways of having it is very simple. That’s why I chose to call this recipe “lazy burrata.” You just have to get three ingredients out of your fridge, and you’ve got a delicious burrata dish. Here’s how to make it:
1. Prepare The Tomatoes
I always use cherry tomatoes for this recipe, but you can use any kind. Grab a handful or two of cherry tomatoes, wash them, dry them, and then put them in a bowl or on a plate. Take a fork and smash them down. That’s it.
2. Place The Burrata
For this step, place one burrata in the middle of the plate or bowl on top of the tomatoes. Not all grocery stores sell burrata, but most do. I can assure that Trader Joe’s, Sprouts, and Whole Foods all sell it.
3. Drizzle The Pesto
Pesto is the besto. I’m upset that I thought that and wrote it on this post, but I won’t apologize for it. Pesto really does elevate any dish. Drizzle however much pesto you want on top of the burrata and tomatoes. My personal all time favorite store-bought pesto is the Vegan Kale, Cashew & Basil Pesto from Trader Joe’s. It’s so delicious and the ingredients are very clean.
4. The Final Touches
The recipe is *mwah* chef’s kiss as is, but there are a few small things you can do to elevate it. I like sprinkling a little bit of salt and pepper on top. If you want to make it a little spicy, sprinkling some crushed red pepper is the way to do it. Lastly, you could eat just the tomatoes, burrata, and pesto, but in my opinion, the best way to eat this is to accompany it with some bread or crackers – that’s what turns this into a delicious meal!

Ingredients
- 1 burrata
- handful or two cherry tomatoes

Instructions
