A few months ago I woke up and was craving a savory breakfast, but I didn’t want the typical avocado toast. Mexican food is some my favorite food, so I decided to make breakfast tacos, but with a healthy spin on them. Don’t get me wrong, bacon and cheese and sour cream and potatoes are delicious add-ons in a taco, but sometimes ya just want a healthier version of an incredibly delicious breakfast!
I now make this recipe all the time, it’s that good!
For this recipe, you’ll need corn tortillas, refried beans, Greek yogurt (just trust me), eggs, and salsa. You can also add any additional ingredients that you want. I typically make 2 tacos for myself, but if you want more or less, that’s up to you!
Let’s get into how to make these delicious, healthy, easy, and vegetarian breakfast tacos!
Step 1: Heat The Tortillas
First step is to heat up the tortillas! I think the best and healthiest way to do it is to just put the tortillas directly on the stove over the fire, let them sit for a few seconds, flip them over, and take them off. If you have an induction stove, you can heat them up in a pan (with or without oil) until they get a little crispy.
Step 2: Spread On The Toppings
Next step is to spread on the beans, greek yogurt, salsa, and any additional ingredients.
You can use any refried beans! My favorites are the Trader Joe’s Fat Free Refried Beans and the Trader Joe’s Refried Black Beans. In a separate bowl, heat the beans up in the microwave. You can measure it by eye, but just spread a good layer of beans onto each tortilla!
I know Greek yogurt sounds super weird and you might be apprehensive to try it with this recipe, but trust me! Plain Greek yogurt is the most incredible and healthy sour cream substitute, I use it in place of sour cream all the time. Spread a thin layer of it on top of the beans. Please just try it!
Lastly, layer on any other ingredients (such as avocado, cheese, hot sauce, etc), but for sure use salsa! My absolute favorite salsa to use for this recipe is the Salsa Verde from Trader Joe’s, it’s so good!
Step 3: Egg Time
I like to multitask, so I typically cook the eggs in the background while I complete step #2. For this recipe, I make crispy over easy eggs, but you can make them however you like. Just cook one egg per taco and place it on top of all the toppings!
Step 4: Final Touches
You always gotta add those final touches! On top of the eggs, definitely sprinkle a little salt and pepper. If you want to be extra fancy, sprinkle some paprika on top. If you want to be extra extra fancy, sprinkle a little bit of cilantro. There you have it, some delicious and healthy breakfast tacos!

Easy and Healthy Breakfast Tacos
Ingredients
- 2 corn tortillas
- 2 eggs
- Refried beans
- Plain Greek yogurt
- Salsa (recommendation: Trader Joe's Salsa Verde)
Instructions
- Heat up the tortillas over the stove until they get slightly crispy. Put them on a plate.
- In a separate bowl, heat up refried beans in the microwave.
- Cook 2 eggs over the stove. I make them over easy, but you can make them however you like.
- While the eggs are cooking:– Spread a layer of refried beans onto each tortilla.– Spread a layer of plain Greek yogurt on top of the beans.– Drizzle salsa on top of each tortilla. Here is where you can also add any other ingredients you may want (avocado, cheese, hot sauce, etc).
- Place 1 egg on top of each tortilla.
- Sprinkle with salt and pepper. IF you want to be extra fancy, sprinkle with paprika and cilantro. Enjoy!
