Easy and Healthy Breakfast Tacos
These are a healthy spin on normal breakfast tacos. They're so easy to make and so incredibly delicious!

- 2 corn tortillas
- 2 eggs
- Refried beans
- Plain Greek yogurt
- Salsa (recommendation: Trader Joe's Salsa Verde)
Heat up the tortillas over the stove until they get slightly crispy. Put them on a plate.
In a separate bowl, heat up refried beans in the microwave.
Cook 2 eggs over the stove. I make them over easy, but you can make them however you like.
While the eggs are cooking:- Spread a layer of refried beans onto each tortilla.- Spread a layer of plain Greek yogurt on top of the beans.- Drizzle salsa on top of each tortilla. Here is where you can also add any other ingredients you may want (avocado, cheese, hot sauce, etc). Place 1 egg on top of each tortilla.
Sprinkle with salt and pepper. IF you want to be extra fancy, sprinkle with paprika and cilantro. Enjoy!
