Easy and Healthy Breakfast Tacos

These are a healthy spin on normal breakfast tacos. They're so easy to make and so incredibly delicious!

Ingredients
  

  • 2 corn tortillas
  • 2 eggs
  • Refried beans
  • Plain Greek yogurt
  • Salsa (recommendation: Trader Joe's Salsa Verde)

Instructions
 

  • Heat up the tortillas over the stove until they get slightly crispy. Put them on a plate.
  • In a separate bowl, heat up refried beans in the microwave.
  • Cook 2 eggs over the stove. I make them over easy, but you can make them however you like.
  • While the eggs are cooking:
    - Spread a layer of refried beans onto each tortilla.
    - Spread a layer of plain Greek yogurt on top of the beans.
    - Drizzle salsa on top of each tortilla. Here is where you can also add any other ingredients you may want (avocado, cheese, hot sauce, etc).
  • Place 1 egg on top of each tortilla.
  • Sprinkle with salt and pepper. IF you want to be extra fancy, sprinkle with paprika and cilantro. Enjoy!
