I’m going to get you on one of the most delicious and healthy desserts out there. Snicker dates. Yes.. a date that tastes like a Snickers bar! Everyone that I have made these for loves them and asks for the recipe. The best part is that they are extremely easy to make!
The recipe is very vague, because you really can do whatever you want with these and you can make however many you want at a time. I typically make about 20 dates and they last for around 2 weeks.
You’ll need medjool dates, almond butter (or any nut butter), and chocolate. That’s it!
Before we get into it, I’ll admit that this isn’t the prettiest dessert, but trust me, the taste makes it so worth it! The dates taste like caramel and matched with the almond butter and chocolate, they really can’t be beat!
Step 1: Pit The Dates
First step is to remove the pits from the dates! I highly recommend using medjool dates, because the flavor and texture are really what make this dessert incredible. Start off by cutting each date like a boat (aka hot dog style), taking the pit out, and placing them on a plate. If you’re short on time, most grocery stores sell already-pitted medjool dates! Tip: make sure you check each date after removing the pit just to make sure there’s nothing icky in there.
Step 2: Fill With Almond Butter
Next step is to fill each date with almond butter! I prefer to use almond butter because of the texture, but any nut butter would taste great. Just grab a spoon and fill each date up! I’d say approx 1 tsp-1 tbsp fits in each date, depending on the size of the date.
Step 3: Time For The Chocolate
Any good dessert’s gotta include at least some chocolate, right? This part is all up to you in terms of how much chocolate you want to add. When I make these for myself, I use very little chocolate, maybe less than 1 tsp per date. When I make them for other people, I add a lot more, probably closer to 1 tbsp per date. I like to use the Trader Joe’s Semi-Sweet Chocolate Chips, but you can use any chocolate bars or chocolate chips for these. The darker the chocolate, the healthier this dessert is. In a separate bowl, microwave the chocolate until it is all melted. Next, spoon/drizzle however much chocolate you want onto each date.
Step 4: Freezer Time Baby
Once you’ve finished assembling the dates, you’ve gotta freeze them. Freezing them hardens the chocolate, makes the almond butter texture great, and preserves the dessert for a long time. Once I finish putting the chocolate on the dates, I just put the plate I was assembling them on straight into the freezer. I wait a few hours to let them fully freeze, then I throw them all into a freezer-safe container and put them back into the freezer. Whenever I feel like having this delicious treat, I just grab it straight from the freezer and let it sit out for a few minutes before eating.
When I’m wanting this delicious dessert (which let’s not lie, is just about every night), I usually have 1 or 2 of them depending on how much I want to treat myself!
Snicker Dates
Ingredients
- Medjool dates
- Almond butter (or any nut butter)
- Chocolate (any kind!)
Instructions
- Cut a slit in the dates (hot dog style) and remove the pits. Place all the dates on a plate. Tip: after removing the pit, remember to check each date to make sure there’s nothing icky in there!
- Fill each date with almond butter or your nut butter of choice.
- Melt some chocolate in a microwaveable bowl. I prefer to use the Trader Joe’s Semi-Sweet Chocolate Chips, but any chocolate will be great!
- Spoon/drizzle the chocolate onto each date.
- Put the plate of completed dates in the freezer for a few hours or until the chocolate has completely hardened.
- Once the chocolate has hardened, transfer the dates into a freezer-safe container.
- Anytime you want a date, just take one (or two or three) out of the freezer and let it sit out for a few minutes before eating. Enjoy!
Notes
- When I make this dessert for myself, I usually put about 1 tsp of chocolate on each date. When I make them for others and want to impress them with how great this dessert is, I put about 1 tbsp of chocolate onto each date. It’s up to you!
